Chocolate Cupcakes

A week ago i suddenly felt the urge to try and bake some cupcakes so after a lot of hardwork and watching various YouTube videos  i finally baked them and to my surprise they turned out to be really yummy, i made it again a few days later with my own variations and they also turned out to be pretty good. So i decided to share this quick and easy recipe with all of you….

INGREDIENTS:

2 room temperature Eggs

1/2 teaspoon of Baking soda and Baking powder

1/2 cup of Buttermilk OR 1/2 cup of Milk + 1/2 teaspoon of Vineger

1 stick of Butter

2oz. of semi sweet chocolate

3 quarter cups of Flour

1/2 cup of Cocoa powder

Quarter teaspoon of salt

1 teaspoon of Coffee powder (optional)

1/2 cup of powdered Sugar

1 teaspoon of Vanilla extract

 Vanilla Icing

PROCEDURE:

Take the stick of butter and the chopped semi sweet chocolate in a bowl and heat it in the microwave with 30sec. intervals until it melts properly.

 In a seperate bowl mix the flour, cocoa powder, baking soda, baking powder, salt and coffee powder.

In a seperate bowl crack in 2 eggs, add in the powered sugar and vanilla extract. Mix it well.

Add half of the flour mix to the mixture of eggs and mix it. Then add the buttermilk OR 1/2 cup of milk+ 1/2 teaspoon of vineger to the mixture and stir it well. Add the remaining flour mix along with the melted chocolate mixture and mix it well.

Scoop the mixture into the cupcake liners. (This recipe makes a dozen cupcakes.)

Bake it for 18mins at 350degrees in an oven. (i baked the cupcakes in a microwave for 3mins and it turned out really well )

Once the cupcakes are out of the oven let them cool completely.

I used readymade vanilla icing by Philsbury to ice the cupcakes and topped it with some shredded chocolate.
